About chef
The chef plans the menu: settling the dishes, choosing the ingredients, writing the recipes and pricing the items. The chef also controls costs: the food cost in a dish, wastage, suppliers' prices; and develops food waste reduction indicators to track how much food is wasted.
Working with the hands stays part of the trade. The chef uses cutting tools, stores fresh food in the right conditions, and finishes the dishes going out, garnishing them. Alongside that, the chef leads the kitchen team — from the sous chef down to the kitchen porter — and works with the whole hospitality team: front of house, bar, purchasing.
The chef complies with health, safety and food hygiene legislation: storage temperatures, separation of raw from ready, records. Catering premises operate a food safety system based on hazard analysis (HACCP) and are subject to food safety inspection.
