About grill cook
The cooking itself is the craft. The grill cook applies cooking techniques to a product that continues to cook after it leaves the heat, judges doneness by feel and appearance, and times several items of different thicknesses so they arrive together. Cutting tools are used for portioning before service, and finishing and garnishing the plate is also part of the job.
Preparation and storage sit behind the service. The grill cook stores fresh food correctly, which on this station means meat and fish held at the right temperature and rotated.
Hygiene and safety are not side matters here. The grill cook keeps to the legislation on health, safety, hygiene and food handling, cleans the food preparation area, and works to occupational health and safety rules around open flame, hot fat and heavy equipment. All of it happens inside a hospitality team working to service times.
